I've made a sev...It looks delicous Pauline! :0)<br />I've made a several roulades before, and find that turning the sponges out onto a dry tea towel (dusted with either icing sugar or cocoa powder to prevent sticking), and rolling it up whilst still warm, and leaving it rolled up to cool helps to prevent cracking. The sponges 'stretch' better whilst warm, but if you were to fill it before it cooled the filling would melt! When you un-roll the cooled sponge it should keep some of the curl which helps it roll with the filling inside...you can also help the roll 'start' by partially cutting through the sponge a couple of centimetres in from the end, so that it 'folds' over at th start.
